I think this quote mean that the actual climb is when you have to the most. The beginning seems like forever, the middle lets you know that your half way there, and the top is where the real CLIMB starts. You have too many worries at the top. And when the top becomes overwhelming, then you start free falling, plummeting to the ground.

From the Swedish Proverb, the first part, Fear less, Hope more is referring to being strong. The second part Eat less Chew more, I'm not really sure what that is actually referring to. The third and final Talk less, Say more, I guessing it refers to speaking up and not just talking about non-sense.
